Instagram has no font setting for text. These styles are Unicode characters that look like styled letters, so they paste anywhere Instagram takes text: your name, bio, captions and comments. They work in Facebook posts the same way.
Your username is the exception. It takes only letters, numbers, periods and underscores, so styled letters can’t go there.
A phone shows a style only if its fonts include those characters. If not, it shows empty boxes. Check the post on your own phone after you paste.
Screen readers, like VoiceOver on iPhone, can read styled letters one by one by their symbol names, or skip them. A whole bio in script can reach a blind follower as noise.
Unicode has no styled numbers for italic, script, gothic and the other styles marked “No digits”, so their numbers stay plain. Bold, sans, sans bold, double-struck and monospace have their own numbers.
